Ingredients:
3 lb turkey breast
dried italian seasoning and sage
pepper
olive oil
Pre-heat oven to 425 degrees. Clean turkey under cool water and pat dry. Remove the skin. Place on a roasting pan. Sprinkle the italian seasoning and sage all over turkey. Press herbs into the turkey. Sprinkle with pepper and drizzle the entire turkey lightly with olive oil.
Place in oven for 20 minutes. Remove turkey and reduce temperature to 350 degress. Cover turkey with foil and return to oven for 70 – 100 minutes, or until the internal temperature reaches 170 degress. The last 5 minutes of roasting should be done without the foil covering the turkey.
Let the turkey rest (covered by foil) for 10-15 minutes before slicing into it.
