Waffles with no coffee

I’m so glad it’s Saturday and beautiful outside!!  After reading Kristen’s Waffle Heaven post I was inspired to get my waffle maker out and take the time to make waffles.

Waffle batter and pancake batter are very similar but I always feel like waffle making is so much more work than pancakes.  I’m sure it’s because I have to pull out the big waffle making apparatus and then put it back downstairs afterward, but still, it’s really not that much more difficult.

I decided to make the chocolate waffles because, well why not go all out and make something special.  I left out the smashed banana, didn’t use AP flour, but whole wheat flour and coconut flour instead and reduced the sugar and oil.

I don’t have a super cute heart shaped waffle maker like Kristen, but they still look pretty good huh?  Tasted good!  I sliced up some strawberries, made a PB cream sauce (PB, soymilk and cinnamon) and cooked up some scrambled eggs on the side for some protein.  It was a wonderful and filling breakfast, and my waffle envy was fulfilled 🙂

Coffee No More

This past week Jacob and I have been having minor stomach discomfort and think it may come from the coffee, or the amount of coffee we drink.  Last night we decided to stay away from coffee for a week and see if it helps.  I really don’t think this will be a problem for me.  I drink tea all the time, and have gone through phases of just not wanting coffee and just drinking tea instead.

That being said, I’m still going to drink my caffeine… like with this morning’s cup of double spiced chai tea with a splash of soymilk and a sprinkle of sun crystals.

One thing that totally makes my tea drinking easier and quicker in the morning is my awesome electric tea kettle!

The water heats up so fast, it’s pretty amazing.  We never got around to buying a stove top kettle and I don’t see why we’d need one after using this bad boy.

It’s afternoon now and I still haven’t had coffee… Jacob’s another story… he had a mocha on our walk.  Guess it’s just me this week with no coffee!

Question:  Are you a coffee or drinker?

Normally I’d just drink 1 BIG cup of coffee in the morning then tea throughout the day.


A couple of you were interested in the sweet onion brown rice from the other day.  Well here it is.  It’s super easy and very tasty too!

    mmm yours look so good and very chocolate-y!! Thanks for the link 🙂 I’m not a big coffee drinker because the caffeine tends to upset my tummy too and makes me all shaky. I do fine with tea though. Now that’s what I need to get is a tea kettle! Have a nice weekend!

    good for you with the no coffee! I dont think I could do that even for a few days! I love my coffee, I just do limit how much I drink! maybe if you just cut back you wouldnt have to take it out completely? that tea does look tasty though as does the CHOCOLATE waffles!

    YUM- those waffles look incredible. Love that they’re chocolate- how cool. I’m with Naomi…I love my coffee…I don’t want to give it up :). We saw couples resort in the theater and both liked it! I’m with Jacob though…I thought it was going to be funnier. I expect a lot from Vince!

    Those waffles look soo good! I would say that I am more of a coffee drinker than tea drinker but both are great!

    I drink way too much coffee and am trying to cut back. Right now, I’m drinking half regular coffee half decaf, but it’s still too much… Let us know how your experiment goes; I hope you’ll feel better.

    I drink about 2 cups a day but I know if I have a 3rd one i won’t be sleeping that night.

    I go in and out with coffee….but 99% of the time it is coffee for this gal. Love the stuff unless I am having tummy issues. Your waffles cam out great! Love the PB sauce on the choc waffles. Agreed, something about dragging out the heavy waffle maker is such a chore! You did good girl! 🙂
