Middle of June

It’s the middle of June.  The weather is cool and the sprinkles are out.  Not what I expect for the middle of June.

Even though all I want are warm things when it’s cold out I was craving a fresh fruity smoothie on this middle of June day.

At my most recent trip to the farmers market I picked up a bunch of beets.  Roasted beets are perfect in salads or mixed with potatoes.  The greens never go to waste either… usually they end up in my eggs but today they found a new place of their own.  In my smoothie.

Beets greens are packed with vitamins A and C, along with the antioxidants beta Carotene and Lutein

Berry Banana Beet Blender

Ingredients:

1 cup soymilk
1/2 ripe banana
4-5 frozen strawberries
3-4 beet green leaves
1 tbsp slivered almonds

Combine all ingredients except the almonds in a blender.  Start on low for 10-15 seconds then blend for 30 seconds on high.  If you want it thicker feel free to add a few ice cubes.

Pour into your pretty glad and top it off with the almonds.

    I think that sounds wonderful! It is so hot, I am on a huge smoothie kick lately!!!

    I am getting back into push-ups this week. I was so sick last week, I completely fell off the push-up bandwagon 😦
