Pumkpin Pie Pancakes

Pumpkin Pancakes


2/3 cup old fashioned oats
1/4 cup cottage cheese
1/4 cup pumpkin puree
3/4 cup plain soy milk
1 egg white
1/2 TBSP canola oil
1/2 cup whole wheat flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp pumpkin pie spice

Combine oats, cottage cheese, pumpkin puree and soymilk and let it sit for 8 minutes.  After 8 minutes mix in the egg white and oil.  Next stir in the flour, baking soda and spices until just combined.  Cook on a medium heat skillet until both sides are golden brown.  Recipe serves 2 ( 2 pancakes each).
