Waffles with no coffee

I’m so glad it’s Saturday and beautiful outside!!  After reading Kristen’s Waffle Heaven post I was inspired to get my waffle maker out and take the time to make waffles.

Waffle batter and pancake batter are very similar but I always feel like waffle making is so much more work than pancakes.  I’m sure it’s because I have to pull out the big waffle making apparatus and then put it back downstairs afterward, but still, it’s really not that much more difficult.

I decided to make the chocolate waffles because, well why not go all out and make something special.  I left out the smashed banana, didn’t use AP flour, but whole wheat flour and coconut flour instead and reduced the sugar and oil.

I don’t have a super cute heart shaped waffle maker like Kristen, but they still look pretty good huh?  Tasted good!  I sliced up some strawberries, made a PB cream sauce (PB, soymilk and cinnamon) and cooked up some scrambled eggs on the side for some protein.  It was a wonderful and filling breakfast, and my waffle envy was fulfilled 🙂

Coffee No More

This past week Jacob and I have been having minor stomach discomfort and think it may come from the coffee, or the amount of coffee we drink.  Last night we decided to stay away from coffee for a week and see if it helps.  I really don’t think this will be a problem for me.  I drink tea all the time, and have gone through phases of just not wanting coffee and just drinking tea instead.

That being said, I’m still going to drink my caffeine… like with this morning’s cup of double spiced chai tea with a splash of soymilk and a sprinkle of sun crystals.

One thing that totally makes my tea drinking easier and quicker in the morning is my awesome electric tea kettle!

The water heats up so fast, it’s pretty amazing.  We never got around to buying a stove top kettle and I don’t see why we’d need one after using this bad boy.

It’s afternoon now and I still haven’t had coffee… Jacob’s another story… he had a mocha on our walk.  Guess it’s just me this week with no coffee!

Question:  Are you a coffee or drinker?

Normally I’d just drink 1 BIG cup of coffee in the morning then tea throughout the day.

Running in the sun

I’m so glad Friday is here!  But, before I get into Friday lets back track.

The weather here has been amazing this week.  We’ve had the sun shining and temperatures in the 50-60s.  Normally I’m a morning exerciser but I just had to take advantage of the beautiful running weather instead of running in the cold darkness 5:15 am brings.

I hurried home from work and got on the road around 4:30pm and it was gorgeous.  I ran along the waterfront with Joe.  He enjoyed pulling me along to say hello to every dog we passed.  My legs felt great and I was very happy to see that my 6.2 miles only took 57 minutes.  I tend to run around 10 minute miles when I run by myself.  It’s probably the motivation of having someone with me that speeds up my pace.  This run was great because I ran 9:12 minute miles…. awesome!  It was a glorious afternoon.

I quickly put a pot of sweet onion brown rice on the stove when I returned so that I could refuel as soon as possible.

Dinner really hit the spot.  Yummy sweet brown rice – need my complex carbs!

Pork, apple and slivered almond salad tossed with an almond-tahini dressing – protein, yummy carbs, healthy fats and green!

This dinner left me feeling satisfied and refueled.

Back to Friday — 50 minutes of P90X yoga was done this morning after my small cup of coffee and 1/2 a banana.  I could definitely feel my legs during this session.  They were a bit shaky at times but I know it was from the run last night.

Yoga left me real hungry.  I devoured my breakfast in just a few minutes…. really probably like 3 minutes.

This was mighty delicious.  Oats cooked with a dash of cinnamon, about 1 tbsp millet and 2 egg whites.  Topped with my favorite almond butter and beautiful fresh blueberries.  Yum.

This weekend I’ll probably get another run in with Jacob:) and hopefully look for a new laptop!

Black Rice

Last night I did push ups for Day 2/Week 6.  Having a day off from push ups really made a huge difference.  Once I finished the push ups I did my move of the day.  I love the bent leg ab lift.  I ended up doing more than I put down on the instruction page.

While I was exercising dinner was simmering away.  I had half of a can of crushed pineapple in the fridge I needed to use up so I tried something new.

I cooked the black wild rice with the crushed pineapple then added some diced steak, red onion and chopped spinach.

The rice could have cooked longer but the flavors were delicious.

I’ll get an update about the chirp appt yesterday once I run tomorrow.

Spinach Purée = Deliciousness

Ahhh waking up to a day that isn’t Monday is always a great thing.  I don’t know why but every Monday I’ve got a case of the Mondays!

Tuesday started with a 3.3 mile run (35 minutes).  I guess I thought it would be a lot colder than it actually was because about half way through the run I had to take off my hat and gloves and wished I would have left my sweatshirt at home.  Oh well, I made it back and definitely didn’t catch a chill.  After Sunday and Tuesday’s run I think I may wait an extra day till my next run.  Normally it would be on Thursday but my runs just haven’t been that great so a mini break may be in order.

For breakfast I had… you guessed it rice!  I nukes a bowl of wild rice with some soy milk, flax seed, cinnamon and then topped it with some peanut butter and strawberries from the freezer.  It was nice and cinnamony, but I do like my oats much more.

At work I munched on an apple and some cheese (dubliner i think?).  I’ve been buying gala apples lately but somehow on accident I bought cameo apples instead.  It was a delightful surprise because the cameo was delicious!  I’d definitely buy them again but on purpose next time.

Lunch was a big bowl of left over sweet n sour chinese meatballs with wild rice.  It tasted just as good then next day.

I had real dessert after lunch today – chocolate 🙂

I love dark chocolate.  It has to be at least like 75% dark chocolate but the darker the better.  I’ve come to love the bitter taste.  It’s really satisfying.   Plus the good thing is Jacob thinks it’s gross so it’s all left for me!

Do you like banana and peanut butter?  YES, who doesn’t??  Well I made a smoothie that looks like pureed spinach but tastes like banana and PB.

People probably think I’m strange when I drink this green deliciousness with a smile on my face but of well.  It’s good for me and tastes so good too.

When I got home from work I was happy that I didn’t have to make dinner.  My mom came over for 90 minutes of yoga and brought dinner to bake while we worked up a sweat.

This dinner was seriously so good.  She baked up an acorn squash and filled it with wild rice, mushrooms, onions and more goodies.

Dirty Rice Anyone??

Monday morning started out like many other Mondays… sleepy.  When I pulled myself out of bed after snoozing for a good 30 minutes I took Joe for a morning walk.  Once home oats were in order.

I had a nice bowl of oatmeal with raisins peanut butter and almond butter.  The best of both worlds!

Lunch turned into a 3 part meal.

Act 1: lovely left over butternut squash soup topped with sliced almonds.


Act 2: herb turkey, spinach and cranberry sauce sammy on a squash wheat roll

Act 3: carrot (dessert??)

I love the crunch of big ol’ carrots.

Once I got home from work I knocked out my push ups for Week 3.  They’re starting to get pretty difficult as the numbers increase but to get to the 100 I’ll just have to keep doing them 3 days a week like I’m told.

Dinner was a recipe my dad sent me – Sweet n Sour Chinese meatballs.  Mmmmm they were yummy.  Along with the meatballs we had a mixture of veggies (carrots, asparagus, broccoli and bell peppers), pineapple and wild rice (or what my dad likes to call dirty rice).

Doesn’t look dirty to me, just delicous as it was.  I made enough rice to feed at least 10 so I’ll probably be eating rice with along every meal the next couple days.

Wild rice is definately my new fav.  It’s much easier to cook since you cook it like pasta.
