Swiss chard comfort food

Another Tuesday down, another CSA delivery in my fridge.

This weeks mix included:

Spinach
Garlic greens
Swiss chard
French sorrel
Red leaf lettuce

The farmer threw in the leaf lettuce which was sweet.  It looks like it’s getting a little wilty so we’ll have to use it right away.  Another week I’m happy with the produce we received.

For dinner I knew just what I was going to make with swiss chard, and it was inspired by my aunt Arlene.

Reasons to eat swiss chard:  It is also a good source of Thiamin, Folate and Zinc, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Riboflavin, Vitamin B6, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.

What a mouthful!  Guess it’s time to eat a mouthful of it.

Back to the food.  There is a name for this meal but it’s escaped my memory. 

Basically I sauted the swiss chard stalks, 1 apple and chicken sausage and 1 stalk of garlic greens in some olive oil until it became tender, then I added the swiss chard leaves.  This cooked for about 1 minute then I cracked 4 eggs ontop of the swiss chard mixture and sprinkled a bit of sea salt on them.  Next I covered the pan with foil and ‘steamed’ the eggs until the yellow was just getting hard (we don’t like runny yolks in our house).

I had a roll on the side and found this meal so comforting and delicious.  The swiss chard kepts its wonderful flavor and the apple and chicken sausage brought a little sweetness to the dish.  I’m excited to have leftovers for the next day.  Definately a meal I will make again!
